Hibiză cu prune pocănite

Este o plăcintă de pe Valea Hârtibaciului; rețeta a fost împrumutată de la etnicii saşi din satul Vurpăr, de către localnicii români.

Ingrediente pentru aluat: 1 kg faină, 100 g drojdie, sare, 1 cană cu lapte, 3 ouă, 200 g zahăr, 1 plic zahăr vanilat, 100 ml ulei, 1 kg de prune

Ingrediente pentru cremă: 2 litri de lapte, 250 g griş, 400 g smântână, 5 ouă, 2 linguri cu zahăr, sare, 1 plic zahăr vanilat        

Cum se pregăteşte: Într-o cratiţă se amestecă făina cu drojdia şi puţină sare; se adaugă laptele, zahărul, ouăle, zahărul vanilat şi uleiul; se frământă până când aluatul nu se mai lipeşte pe mâini, apoi se lasă aluatul la dospit. Între timp, se spală prunele şi se pocănesc, adică li se scot sâmburii. Separat se pregăteşte crema: se fierbe grişul în lapte, cu zahăr vanilat şi un vârf de sare. În grişul rece se adaugă apoi smântâna, ouăle şi zahărul.

Aluatul dospit se întinde sub formă de turtă, pe masa presărată cu făină. Se pune aluatul în tava unsă cu ulei, iar peste aluat se aşază prunele rupte în două, cu miezul în jos, una lângă alta. Peste prune se presară zahăr şi se întinde crema. Hibiza se pune la copt în cuptorul încălzit.

Când se pun prunele peste aluat, se umplu mai întâi marginile, apoi mijlocul. Dacă prunele nu-s foarte bine coapte, se aşază în tavă cu miezul în sus, ca să nu curgă toată zeama în aluat. Hibiza se coace în tavă, în cuptorul cu lemne, că se face mai bine, nu se pârleşte. Prima dată se pune pita în cuptor, după aia hibiza. Poţi să te linji pe degete de bună ce e.

 

 

Pie (hibiză) with popped plums

It is a pie from the ethnographic area Hârtibaci Valley; the recipe was recorded in the village Vurpăr, where the Romanians borrowed it from the Saxons.

 

Ingredients:

  • 1 kg flour
  • 100 g yeast
  • salt
  • 1 cup warm milk
  • 3 eggs
  • 200 g sugar
  • 1 sachet vanilla sugar
  • 100 g vegetable oil
  • 1 kg plums

For the custard:

  • milk
  • semolina
  • vanilla sugar
  • sour cream
  • 5 eggs
  • 2 tablespoons of sugar

 

Instructions:

In a pot mix the flour, the yeast and a pinch of salt; add the milk, the eggs, the vanilla sugar and the oil; knead until the dough comes off the hands, then let it leaven. In the meantime wash the plums and „pop” them, that is open them and remove the stone. Separately make a liquid pudding by boiling the semolina in the milk with vanilla sugar. Let it cool, then add the sour cream, the eggs and the sugar to make a custard. Sprinkle flour on the table and spread the leavened dough by hand into a sheet. Place the dough sheet into an oiled baking tray and on it arrange the plums with the peel upwards. Sprinkle the plums with sugar and pour the custard levelling it well. Bake the hibiza in the preheated oven.

 

When you place the plums on the dough, you have to start from the rims of the tray towards the middle. If the plums are not very well ripened, then place them with the peel downwards, this way less juice will drip into the dough. You better bake hibiza in a tray in the wood fired oven, because it bakes it better, it does not get burned. First you bake the bread, then the hibiza. It is so good, that you’ll lick your fingers.
